1 can (15 oz) refried beans

1 cup shredded cheddar cheese

1/2 cup diced onions

1/2 teaspoon garlic powder

1/2 teaspoon cumin

1 tablespoon olive oil

8 small corn tortillas

1/4 cup fresh cilantro, chopped

Salsa, for serving

Sour cream, for serving (optional)

Jalapeño slices, for serving (optional)

Instructions
 

Heat the Beans: In a medium saucepan, heat the canned refried beans over medium heat. Stir in the garlic powder and cumin until well combined. Cook for about 5 minutes until warmed through.

    Prepare the Tortillas: In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Once hot, add the corn tortillas one at a time, cooking each for about 30 seconds per side, until lightly golden and pliable. Keep them warm in a clean kitchen towel as you fry the rest.

      Assemble the Tacos: Take a warm tortilla and spoon about 2 tablespoons of the heated refried beans onto one half of the tortilla. Top the beans with diced onions and a sprinkle of cheddar cheese.

        Fold and Fry: Fold the tortilla over to form a taco. Place the taco seam-side down in the skillet (you can use the same skillet from before) and cook for 2-3 minutes on each side, or until the cheese is melted and the taco is golden and crispy.

          Serve: Remove cooked tacos, and repeat the assembly process until all are made. Serve topped with fresh cilantro, salsa, jalapeño slices, and an optional dollop of sour cream.
