Ingredients

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 small onion, diced

3 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

Salt and pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Begin by boiling a large pot of salted water. Cook the fettuccine according to the package instructions until al dente. Drain and set aside, reserving a little bit of the pasta water.

Season the Shrimp: In a medium bowl, toss the peeled shrimp with the Cajun seasoning until evenly coated.

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion, and cook until softened, about 3 minutes. Then, add the sliced red and yellow bell peppers, and sauté for an additional 2-3 minutes until they begin to soften. Stir in the minced garlic and cook for another minute until fragrant.

Cook the Shrimp: Push the vegetables to the side of the skillet and add the seasoned shrimp. Cook for about 3-4 minutes, until the shrimp turn pink and opaque, stirring occasionally.

Create the Sauce: Pour in the chicken broth and turn the heat to medium-high. Allow it to reduce for about 2 minutes. Then, gradually add in the heavy cream, stirring until fully combined.

Combine Pasta and Sauce: Add the drained fettuccine to the skillet, tossing to coat the pasta evenly with the sauce. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.

Add Cheese: Stir in the grated Parmesan cheese until melted and incorporated into the sauce. Season with salt and pepper to taste.

Serve: Divide the pasta among serving plates and garnish with chopped fresh parsley.
