Cajun Potato Soup

4 large russet potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 green bell pepper, diced

2 celery stalks, diced

4 cups vegetable broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Green onions, sliced (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, diced bell peppers, and celery. Sauté for about 5 minutes, or until the vegetables are softened.

    Stir in the minced garlic and cook for another minute until fragrant.

      Add the diced potatoes, vegetable broth, Cajun seasoning, smoked paprika, and bay leaf to the pot. Bring to a boil, then reduce heat to a simmer.

        Cover and cook for about 20 minutes, or until the potatoes are tender.

          Remove the bay leaf and, using an immersion blender, blend the soup until smooth, or leave some chunks for texture, as desired.

            Stir in the heavy cream and season with salt and pepper to taste. Let it simmer on low heat for an additional 5 minutes to allow flavors to meld.

              Remove from heat and serve hot, garnished with fresh parsley and sliced green onions.
