4 large russet potatoes, peeled and diced

1 medium onion, diced

2 garlic cloves, minced

1 green bell pepper, diced

1 stalk celery, diced

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon dried thyme

1 teaspoon dried oregano

4 cups vegetable broth

1 cup heavy cream (or coconut milk for dairy-free)

1 tablespoon olive oil

Salt and pepper to taste

1/4 cup chopped green onions for garnish

1/4 cup shredded cheddar cheese for garnish (optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion, garlic, green bell pepper, and celery. Sauté for about 5-7 minutes until the vegetables soften and the onions become translucent.

    Add the diced potatoes to the pot, along with the smoked paprika, cayenne pepper, thyme, oregano, salt, and pepper. Stir well to coat the potatoes in the spices.

      Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer uncovered for about 20-25 minutes, or until the potatoes are tender.

        Once the potatoes are cooked, use an immersion blender to blend the soup until smooth, or you can transfer half of the soup to a blender, blend until smooth, and then return it to the pot for a creamy texture.

          Slowly stir in the heavy cream (or coconut milk) and allow the soup to heat through for another 5 minutes. Taste and adjust seasoning if necessary.

            Ladle the soup into bowls and garnish with chopped green onions and a sprinkle of shredded cheddar cheese if desired.
