vegetable broth

Cajun seasoning

smoked paprika

bay leaf

Instructions
Heat olive oil in a large pot over medium heat. Add the chopped onion and bell pepper, and sauté until softened, about 5 minutes.
Stir in the garlic, celery, and carrots; cook for another 3-4 minutes until fragrant.
Add the diced potatoes, vegetable broth, bay leaf, Cajun seasoning, and smoked paprika. Bring to a boil.
Reduce the heat to low, cover, and let simmer for 20-25 minutes, or until the potatoes are tender.
Remove the bay leaf, then use an immersion blender to blend the chowder until smooth, or leave it chunky for more texture (your choice!).
Stir in the milk (or coconut milk) and adjust seasoning with salt and pepper. Let it heat through for another 5 minutes.
Serve hot, garnished with fresh parsley.
Notes
For a dairy-free version, use coconut milk instead of whole milk.
