2 boneless, skinless chicken breasts, sliced

2 tablespoons Cajun seasoning

2 tablespoons olive oil

8 oz penne pasta

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 medium onion, sliced

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Begin by seasoning the sliced chicken breasts with Cajun seasoning, ensuring all pieces are well-coated.

    In a large pot, boil water and cook the penne pasta according to package instructions until al dente. Drain and set aside.

      In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook for about 5-7 minutes, until golden brown and cooked through. Remove from the skillet and set aside.

        In the same skillet, add the sliced red and yellow bell peppers and onion. Sauté for 3-4 minutes until they start to soften.

          Add minced garlic to the skillet and cook for an additional 1-2 minutes, stirring to avoid burning.

            Lower the heat, then stir in the heavy cream, mixing well until combined with the sautéed vegetables.

              Gradually add the grated Parmesan cheese, stirring continuously until the sauce is smooth and creamy. Season with salt and pepper to taste.

                Return the cooked chicken to the skillet, followed by the cooked penne pasta. Toss everything together until evenly coated with the creamy sauce.

                  Allow the pasta to warm through for a couple of minutes, then remove from heat.

                    Serve hot, garnished with chopped fresh parsley for an added touch.
