Ingredients

4 lobster tails

1 cup unsalted butter

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

2 sprigs fresh thyme

1 tablespoon chopped fresh parsley (for garnish)

Instructions

Prepare the Lobster Tails: Start by using kitchen shears to carefully cut along the top shell of each lobster tail, stopping just before the fan end. Gently lift the meat away from the shell, keeping it attached at the end, and lay the meat on top of the shell. This is called deveining. Set aside.

Melt the Butter: In a medium-sized saucepan over low heat, melt the unsalted butter. Make sure not to let it brown; we want to keep it a delicate yellow.

Add Flavors: Once the butter is melted, stir in the minced garlic, lemon juice, sea salt, and black pepper. Add the sprigs of fresh thyme to infuse the butter with aromatic flavors.

Poach the Lobster: Carefully place the lobster tails into the melted butter mixture. Make sure the tails are completely submerged. Allow them to poach gently in the butter for about 8-10 minutes, or until the lobster meat is opaque and tender. Avoid boiling the butter to keep the lobster juicy.

Rest and Finish: Once cooked, remove the lobster tails from the butter and let them rest for a few minutes. Drizzle some of the butter sauce over the tails for added richness if desired.

Garnish and Serve: Place the lobster tails on a serving platter. Garnish with chopped fresh parsley for a burst of color and freshness. Serve immediately with lemon wedges on the side for an additional squeeze of zest.
