2 large chicken breasts, diced

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon chili powder

1 teaspoon garlic powder

Salt and pepper to taste

1 cup brown rice (or quinoa)

2 cups vegetable broth (or water)

1 can black beans, rinsed and drained

1 cup corn (frozen or canned)

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup shredded cheese (cheddar or a Mexican blend)

1/2 cup cilantro, chopped

1 lime, cut into wedges

Optional toppings: sour cream, salsa, pickled jalapeños

Instructions
 

Cook the Rice: In a saucepan, bring the vegetable broth (or water) to a boil. Add the brown rice, reduce the heat to low, cover, and simmer for 30-40 minutes until the rice is tender and the liquid is absorbed. Fluff with a fork and set aside.

    Prepare the Chicken: In a large skillet, heat the olive oil over medium-high heat. Season the diced chicken with smoked paprika, chili powder, garlic powder, salt, and pepper. Add the chicken to the skillet and sauté for 6-8 minutes, or until fully cooked and slightly browned. Remove from heat.

      Combine Ingredients: In a large bowl, mix the cooked rice with black beans, corn, halved cherry tomatoes, and half of the chopped cilantro.

        Assemble the Bowls: Divide the rice and vegetable mixture among four bowls. Top each bowl with a generous portion of the cooked chicken, sliced avocado, and shredded cheese.

          Garnish: Sprinkle each bowl with the remaining cilantro and serve with lime wedges on the side. Allow your guests to squeeze fresh lime juice over their bowls for an extra burst of flavor.
