Ingredients

4 large russet potatoes

1 cup cooked chicken, shredded

1/2 cup buffalo sauce

1/2 cup cream cheese, softened

1/4 cup sour cream

1 cup shredded cheddar cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

2 tablespoons green onions, sliced (for garnish)

Olive oil (for drizzling)

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C).

Bake the potatoes: Scrub the russet potatoes and poke several holes in each with a fork. Place them directly on the oven rack and bake for about 45-60 minutes, or until tender.

Prepare the filling: While the potatoes are baking, in a large bowl, mix the shredded chicken with buffalo sauce, cream cheese, sour cream, garlic powder, onion powder, and black pepper. Ensure everything is well combined.

Scoop the potatoes: Once the potatoes are fully cooked and cool enough to handle, slice them in half lengthwise and scoop out the insides into the bowl with the chicken mixture, creating a potato shell about 1/4 inch thick to ensure they hold their shape.

Mix and mash: Combine the scooped potato with the buffalo chicken filling until well-mixed.

Fill the potato cups: Spoon the mixture back into the potato skins, pressing down slightly to pack them in.

Add cheese: Top each filled potato cup with a sprinkle of shredded cheddar cheese, then drizzle lightly with olive oil.

Bake again: Place the filled potato cups on a baking sheet and return them to the oven for an additional 15-20 minutes, or until the cheese is melted and bubbly.

Garnish: Remove from the oven and let cool slightly. Garnish with sliced green onions before serving.

                    Prep Time: 15 minutes | Total Time: 1 hour 15 minutes | Servings: 8

                      - Presentation Tips: Serve the potato cups on a rustic wooden platter. Place a small bowl of extra buffalo sauce on the side for drizzling or dipping, and garnish with additional sliced green onions for a pop of color!
