Buffalo Chicken Roasted Potato Bake

2 large potatoes, diced into cubes

2 cups cooked shredded chicken (preferably rotisserie)

1/2 cup buffalo sauce

1 cup shredded cheddar cheese

1/2 cup sour cream

1/4 cup green onions, chopped

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the diced potatoes, olive oil, garlic powder, onion powder, salt, and pepper. Toss until the potatoes are evenly coated.

      Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Roast in the preheated oven for 25-30 minutes, or until they are golden and tender, stirring halfway through.

        While the potatoes are roasting, in another bowl, mix the shredded chicken with buffalo sauce until well coated.

          Once the potatoes are done, remove them from the oven and lower the temperature to 375°F (190°C).

            In a large baking dish, layer half of the roasted potatoes on the bottom. Spread half of the buffalo chicken mixture over the potatoes.

              Pour half of the sour cream on top, then sprinkle with half of the cheddar cheese.

                Repeat the layers with the remaining potatoes, buffalo chicken, sour cream, and cheese.

                  Bake in the oven for an additional 20-25 minutes, or until the cheese is melted and bubbly.

                    Remove from the oven and let it cool for a few minutes before garnishing with chopped green onions.
