2 cups cooked chicken, shredded

1/2 cup buffalo sauce (adjust for spice preference)

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/2 cup green onions, finely chopped

1 pack (20 count) egg roll wrappers

1 egg, beaten (for sealing)

Oil for frying (vegetable or canola)

Optional: blue cheese crumbles or ranch dressing for dipping

Instructions
 

In a large bowl, combine the shredded chicken, buffalo sauce, mozzarella cheese, cream cheese, and chopped green onions. Mix until well combined and creamy.

    Lay an egg roll wrapper on a clean surface, with a corner facing you. Place 2-3 tablespoons of the buffalo chicken mixture in the center of the wrapper.

      Fold the bottom corner of the wrapper over the filling, then fold in the sides. Roll it up tightly, sealing the top corner with a little beaten egg. Repeat with the remaining wrappers and filling.

        In a large skillet or deep fryer, heat a few inches of oil over medium heat until it reaches 350°F (175°C).

          Carefully add 3-4 egg rolls to the hot oil, frying until they are golden brown and crispy, about 3-4 minutes per side. Make sure not to overcrowd the pan.

            Remove the egg rolls from the oil and place them on a paper towel-lined plate to drain excess oil.

              Serve warm with blue cheese crumbles or ranch dressing on the side for dipping.
