Broccoli Cheese Pasta

8 oz (225g) penne pasta

2 cups broccoli florets

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream

1 cup sharp cheddar cheese, grated

1/2 cup Parmesan cheese, grated

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli florets to the pot. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

      Reduce the heat to low and pour in the heavy cream, stirring to combine with the garlic. Allow the cream to warm through for about 2 minutes.

        Gradually add the cheddar cheese and Parmesan cheese, stirring constantly until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.

          Add the cooked pasta and broccoli to the skillet, tossing everything together to coat in the creamy cheese sauce.

            Let it cook for another 2-3 minutes to allow flavors to meld together.

              Serve hot, garnished with chopped parsley for a pop of color.
