2 tablespoons unsalted butter

1 medium onion, finely chopped

2 cloves garlic, minced

1 cup carrots, diced

4 cups broccoli florets

4 cups vegetable or chicken broth

1 cup beer-flavored broth (use non-alcoholic beer or sparkling water with a splash of vinegar)

1 cup milk

2 cups shredded sharp cheddar cheese

1 teaspoon Dijon mustard

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh chives or parsley for garnish

Instructions
 

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and diced carrots, cooking for an additional 3-4 minutes until the carrots begin to soften.

      Add the broccoli florets to the pot, followed by the vegetable or chicken broth and beer-flavored broth. Bring the mixture to a boil, then reduce the heat and allow it to simmer for 15-20 minutes, or until the broccoli is tender.

        Remove the pot from heat and use an immersion blender to puree the soup until smooth. You can also carefully transfer the soup to a blender in batches to achieve a creamy consistency.

          Return the pot to the heat and stir in the milk, shredded cheddar cheese, Dijon mustard, and smoked paprika. Cook over low heat, stirring constantly, until the cheese is fully melted and the soup is heated through.

            Season with salt and pepper to taste. Adjust the thickness of the soup by adding more milk or broth if desired.
