Ingredients
  

6 large eggs

1 cup spinach, chopped

1/2 cup diced bell peppers (any color)

1/2 cup cooked and crumbled breakfast sausage or turkey sausage

1 cup shredded cheddar cheese

1/4 cup milk

1 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Olive oil spray (for greasing the muffin tin)

Fresh herbs for garnish (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Grease a muffin tin with olive oil spray to prevent sticking.

      In a large mixing bowl, whisk together the eggs and milk until well combined.

        Add the chopped spinach, diced bell peppers, crumbled sausage, garlic powder, onion powder, salt, and pepper to the egg mixture. Stir until everything is evenly distributed.

          Evenly pour the egg mixture into each muffin cup, filling them about 3/4 full.

            Top each cup with a generous sprinkle of shredded cheddar cheese.

              Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg cups are set and lightly golden on top.

                Remove from the oven and allow to cool for 5 minutes. Use a knife to gently loosen the edges and lift the cups out of the tin.

                  Serve warm, garnished with fresh herbs if desired.
