1 can (15 oz) black beans, rinsed and drained

1 can (14.5 oz) diced tomatoes with green chilies

1 small onion, diced

1 bell pepper (any color), diced

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon chili powder

1/4 teaspoon cayenne pepper (adjust for heat)

Salt and pepper to taste

4 large eggs

Fresh cilantro, for garnish

Avocado slices, for serving

Instructions
 

In a medium skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing until softened, about 5-7 minutes.

    Add the minced garlic to the skillet and sauté for an additional 1-2 minutes, until fragrant.

      Stir in the black beans, diced tomatoes (with juices), cumin, smoked paprika, chili powder, cayenne pepper, salt, and pepper. Simmer the mixture for 10 minutes, allowing the flavors to meld and the chili to thicken slightly.

        While the chili is simmering, prepare your eggs. In a separate non-stick skillet, cook the eggs to your liking: sunny side up, poached, or scrambled – about 3-4 minutes for sunny side up or scrambled.

          Once the chili is ready, spoon it into serving bowls. Carefully place the cooked eggs on top of the chili.

            Garnish with freshly chopped cilantro and serve with avocado slices on the side.
