6 large eggs

2 cups diced hash brown potatoes (fresh or frozen)

1 cup cooked breakfast sausage, crumbled

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (mixed colors)

1/2 cup diced onions

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

2 tablespoons chopped fresh chives (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large bowl, crack the eggs and whisk them until well blended. Add garlic powder, paprika, salt, and pepper, mixing well.

      Stir in the cooked sausage, diced hash brown potatoes, bell peppers, onions, and half of the shredded cheddar cheese into the egg mixture until just combined.

        Grease a 9x13 inch casserole dish with non-stick cooking spray or olive oil. Pour your egg and potato mixture into the dish, spreading it evenly.

          Top the casserole with the remaining shredded cheddar cheese.

            Bake in the preheated oven for 30-35 minutes, or until the eggs are fully set and the top is golden and bubbly.

              Once done, remove from the oven and let it cool for a few minutes before slicing.

                Garnish with freshly chopped chives before serving.
