4 medium-sized round sourdough bread rolls

8 large eggs

1 cup spinach, chopped

1/2 cup cherry tomatoes, halved

1/2 cup cheese (cheddar, mozzarella, or feta), grated or crumbled

1/4 cup milk or cream

2 tablespoons olive oil

Salt and pepper to taste

Fresh herbs (parsley or chives) for garnish

Instructions
 

Preheat your oven to 375°F (190°C).

    Cut the tops off each sourdough bread roll and hollow out the insides with a spoon, leaving about 1/2 inch of bread at the edges. Keep the removed bread for later use, such as breadcrumbs or croutons.

      In a medium bowl, whisk together the eggs, milk or cream, salt, and pepper until well combined.

        In a skillet, heat the olive oil over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted.

          Stir in the halved cherry tomatoes and cook for another minute. Remove from heat.

            Gradually add the spinach and tomato mixture to the egg mixture, followed by the grated cheese. Mix until well combined.

              Pour the egg mixture evenly into each hollowed-out bread bowl.

                Place the filled bread bowls on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the egg is set and the tops are slightly golden.

                  Once baked, remove from the oven and let cool for a minute before serving.

                    Garnish with freshly chopped herbs for extra flavor and color.
