4 salmon fillets (about 6 oz each)

2 ripe peaches, diced

1/4 cup bourbon-flavored barbecue sauce (alcohol-free)

2 tablespoons honey

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 teaspoon fresh ginger, grated

2 cloves garlic, minced

Salt and pepper, to taste

Fresh basil or mint leaves, for garnish

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup.

    In a mixing bowl, combine the diced peaches, barbecue sauce, honey, Dijon mustard, grated ginger, and minced garlic. Stir well until all ingredients are thoroughly mixed.

      Place the salmon fillets on the prepared baking sheet. Season them with salt and pepper on both sides.
