1 lb baby carrots, peeled

2 tablespoons butter

1/4 cup maple syrup

1/4 cup apple cider vinegar

1 teaspoon vanilla extract

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare Carrots: Rinse the baby carrots under cold water and peel them if needed.

    Cook Carrots: In a medium-sized pot, bring water to a boil and add the carrots. Cook for about 5-7 minutes until slightly tender but not fully cooked. Drain and set aside.
