1 cup fresh blueberries

1 tablespoon cornstarch

1/4 cup granulated sugar

1 teaspoon lemon juice

1/2 teaspoon vanilla extract

2 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 cup unsalted butter, softened

1/2 cup brown sugar, packed

1/4 cup granulated sugar (for sprinkling)

1 large egg

1 teaspoon almond extract

1 teaspoon cinnamon

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a small saucepan over medium heat, combine the blueberries, 1 tablespoon of the sugar, cornstarch, lemon juice, and vanilla extract. Stir gently for about 5 minutes until the mixture thickens slightly. Remove from heat and let it cool.

      In a large bowl, whisk together the flour, baking soda, salt, and cinnamon—set aside.

        In another bowl, cream together the softened butter, brown sugar, and the remaining granulated sugar until light and fluffy, about 3-4 minutes.

          Beat in the egg and almond extract to the butter mixture until well combined.

            Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

              Fold in the cooled blueberry mixture gently to create a marbled effect; do not over-mix.

                Using a tablespoon, scoop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.

                  Sprinkle a little granulated sugar over each cookie for an added crunch.

                    Bake in the preheated oven for 12-15 minutes or until the cookies are golden around the edges.

                      Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
