Ingredients

2 cups fresh blueberries, plus extra for garnish

1 package (8 oz) cream cheese, softened

1 cup Greek yogurt or sour cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1/4 teaspoon salt

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1 cup heavy cream

2 tablespoons honey (optional)

Instructions

Prepare the Base: In a mixing bowl, combine melted butter and graham cracker crumbs until well mixed. Press this mixture firmly into the bottom of a 9-inch springform pan to create an even crust. Refrigerate while preparing the filling.

Make the Filling: In another large bowl, beat the softened cream cheese until smooth. Add Greek yogurt, powdered sugar, vanilla extract, and salt. Mix until completely combined and creamy.

Fold in the Blueberries: Gently fold in the fresh blueberries into the cream cheese mixture, ensuring not to crush them too much to keep them whole.

Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form. If you like it sweeter, add honey while whipping.

Combine Mixtures: Slowly fold the whipped cream into the blueberry-cream cheese mixture until fully incorporated and smooth. Take care not to deflate the whipped cream.

Assemble the Cake: Pour the blueberry filling over the refrigerated graham cracker crust, smoothing the top with a spatula. Cover and refrigerate the cake for at least 4 hours, preferably overnight, to set.

Serve: Once set, carefully remove the springform pan. Garnish the top with additional fresh blueberries before slicing and serving.
