Blueberry Cream Cheese Muffins

1 cup all-purpose flour

1 cup whole wheat flour

1/2 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup milk

2 large eggs

1 teaspoon vanilla extract

1 cup fresh blueberries

4 ounces cream cheese, softened

1 tablespoon lemon juice

Zest of 1 lemon

Instructions
 

Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease with cooking spray.

    In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, sugar, and salt until well combined.

      In a separate bowl, mix melted butter, milk, eggs, and vanilla extract until fully blended. Add the lemon juice and zest, then stir again.

        Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix.

          In a small bowl, mix the softened cream cheese with 1 tablespoon of sugar until smooth and creamy.

            Stir in the fresh blueberries into the muffin batter. Reserve a few blueberries for the top of the muffins.

              Fill each muffin cup about halfway with the batter. Add a small dollop of the cream cheese mixture on top of each. Finally, add the remaining batter on top to cover the cream cheese, filling the cups about 3/4 full.

                Sprinkle the reserved blueberries on top of the muffins.

                  Bake in the preheated oven for 18-22 minutes or until golden brown and a toothpick inserted into the center comes out clean.

                    Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
