8 slices of thick-cut bacon

2 medium ripe tomatoes, diced

1/2 cup onion, finely chopped

2 tablespoons brown sugar

1 tablespoon apple cider vinegar

Salt and pepper to taste

4 slices of hearty whole grain bread

4 large leaves of romaine lettuce

Mayonnaise, for spreading

Prepare the Bacon Tomato Jam: In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and set it aside on a paper towel to drain excess fat, leaving about 2 tablespoons of drippings in the skillet.

    Sauté Aromatics: In the same skillet, add the chopped onion to the bacon drippings and sauté until translucent, about 4-5 minutes.

      Add Tomatoes and Seasoning: Stir in the diced tomatoes, brown sugar, apple cider vinegar, and a pinch of salt and pepper. Cook for about 15 minutes, stirring occasionally, until the mixture thickens into a jammy consistency.

        Crisp the Bacon: Once the jam is ready, chop or crumble the reserved bacon and fold it into the tomato mixture. Taste and adjust seasoning if necessary. Remove from heat.

          Toast the Bread: While the jam cools, toast the slices of whole grain bread to your desired level of crispness.
