4 salmon fillets

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cayenne pepper

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Lemon wedges, for serving

Prep the Spinach Mixture: In a skillet over medium heat, add a tablespoon of olive oil. Once hot, add the minced garlic and sauté until fragrant, about 1 minute. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

    Combine Filling: In a mixing bowl, combine the wilted spinach and garlic, cream cheese, and Parmesan cheese. Mix well until thoroughly combined and set aside.

      Prepare the Salmon: Pat the salmon fillets dry and create a pocket in each by slicing them horizontally, being careful not to cut all the way through. Season both the inside and outside of the pockets with smoked paprika, cayenne pepper, thyme, salt, and black pepper.

        Stuff the Salmon: Generously fill each salmon pocket with the spinach and cheese mixture.

          Blacken the Salmon: In a large skillet, heat the remaining tablespoon of olive oil over medium-high heat. Once the oil is hot, place the stuffed salmon fillets skin-side down in the skillet. Cook for about 5-6 minutes until the skin is crispy. Carefully flip and cook the other side for another 4-5 minutes or until the salmon is cooked through and flaky.

            Serve: Remove from heat and let rest for a couple of minutes. Serve hot with lemon wedges on the side for squeezing over the fish.
