4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon Cajun seasoning

Salt and pepper to taste

Lemon wedges, for serving

Prepare the Filling: In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute.

    Add Spinach: Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

      Mix the Filling: In a mixing bowl, combine the sautéed spinach and garlic with cream cheese and grated Parmesan. Season with salt and pepper to taste. Mix until well combined.

        Prepare the Salmon: Preheat your grill or skillet over medium-high heat. Take each salmon fillet and make a pocket by slicing horizontally through the thickest part, being careful not to cut all the way through.

          Stuff the Salmon: Generously stuff each salmon fillet with the spinach and cheese mixture, pressing slightly to close the pocket.

            Season the Outside: Rub the outside of each stuffed salmon fillet with Cajun seasoning, ensuring an even coating.
