4 salmon fillets (about 6 oz each)

2 cups fresh spinach, chopped

1/2 cup grated Parmesan cheese

1/4 cup cream cheese, softened

2 cloves garlic, minced

1 tablespoon Cajun seasoning

1 tablespoon olive oil

Salt and pepper to taste

1 lemon, zested and juiced

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet over medium heat, add olive oil and sauté the minced garlic until fragrant, about 1 minute.

      Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.

        In a medium bowl, mix the sautéed spinach with cream cheese, Parmesan cheese, lemon zest, salt, and pepper until well combined.

          Using a sharp knife, cut a pocket into each salmon fillet, being careful not to slice all the way through.

            Stuff each salmon pocket with the spinach and cheese mixture, packing it in generously.

              Season the outside of the stuffed salmon fillets with Cajun seasoning, ensuring they are well coated.

                In an oven-safe skillet, heat a little more olive oil over medium-high heat. Once hot, sear the salmon on each side for about 2-3 minutes, until you achieve a blackened crust.

                  Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the salmon is cooked through and flakes easily with a fork.

                    Remove from the oven and let it rest for a couple of minutes before serving.
