4 salmon fillets (6 oz each)

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prep the Spinach Filling: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Add chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

      Mix the Filling: In a mixing bowl, combine the softened cream cheese, grated Parmesan, and the cooked spinach-garlic mixture. Stir until well combined. Season with a pinch of salt and black pepper to taste.

        Prepare the Salmon: Lay the salmon fillets skin-side down. Using a sharp knife, cut a pocket into each fillet by slicing horizontally, being careful not to cut all the way through.

          Stuff the Fillets: Generously fill each salmon fillet pocket with the creamy spinach and Parmesan mixture.

            Blacken the Salmon: In a small bowl, mix together smoked paprika, cayenne pepper, dried oregano, salt, and black pepper. Rub the spice mixture all over the outside of each stuffed salmon fillet.

              Cook the Salmon: Heat a non-stick oven-safe skillet over medium-high heat. Add the stuffed salmon fillets, skin side up, and sear for 3-4 minutes until dark and crusty.
