8 slices of sourdough bread

4 ounces goat cheese, softened

1 cup fresh blackberries

2 tablespoons honey

2 tablespoons unsalted butter, softened

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

Optional: arugula or spinach for added freshness

Prep the Blackberries: In a small bowl, mash half of the blackberries with the honey using a fork to create a chunky blackberry spread. Leave the rest whole for later.

    Prepare the Bread: Lay out the slices of sourdough on a clean surface. Spread a generous layer of goat cheese on one side of four slices and the blackberry-honey mixture on the other side.

      Add Thyme: Sprinkle fresh thyme leaves over the goat cheese on each slice, and season with a little salt and pepper for extra flavor.

        Combine: Place the remaining slices of bread on top of the ones with cheese and blackberries, pressing down gently to create sandwiches.

          Butter the Outside: Spread the softened butter evenly on the outer sides of the sandwiches.

            Grill the Sandwiches: Preheat a non-stick skillet over medium heat. Place the sandwiches in the skillet and grill for about 3-4 minutes on each side, or until golden brown and the cheese has melted.
