2 cups all-purpose flour

1 tablespoon baking powder

1 teaspoon salt

1/2 teaspoon baking soda

1/3 cup unsalted butter, chilled and cubed

1 cup buttermilk (or 1 cup milk + 1 tablespoon vinegar, let sit for 5 min)

1 tablespoon honey

1/2 teaspoon garlic powder (optional)

1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)

1/4 cup cheddar cheese, shredded (optional)

Instructions
 

Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper.

    In a large bowl, mix together the flour, baking powder, salt, baking soda, and garlic powder (if using).

      Add the chilled butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

        In a separate bowl, combine the buttermilk and honey, then pour this mixture into the dry ingredients. Stir gently until just combined. If you're using cheddar cheese and herbs, fold them into the dough now.

          Turn the dough out onto a lightly floured surface. Knead gently 2-3 times, just until it holds together (do not overwork the dough).

            Pat the dough into a 1-inch thick rectangle. Using a biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet, touching slightly for a softer edge.

              Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.

                Remove from the oven and let cool slightly. Brush with melted butter and sprinkle with a bit of sea salt if desired.
