4 cups cooked jasmine rice (preferably day old)

6 strips of crispy bacon, chopped

2 eggs, beaten

1 cup peas and carrots mix (fresh or frozen)

1/2 cup green onions, finely sliced

4 cloves garlic, minced

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon ginger, minced

Salt and pepper to taste

Optional: Sriracha or chili flakes for heat

Prepare the Rice: If using freshly cooked rice, spread it out on a baking sheet and let it cool for at least 30 minutes to reduce moisture—the best fried rice is made with dry rice.

    Cook the Bacon: In a large skillet or wok, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the rendered fat in the skillet.

      Sauté Vegetables: In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant. Add the peas and carrots mix and sauté for another 2-3 minutes until tender.

        Scramble the Eggs: Push the vegetable mixture to one side of the skillet. Add the beaten eggs and scramble until fully cooked, about 1-2 minutes. Mix the eggs with the vegetables.

          Add Rice: Add the cooked jasmine rice to the skillet. Use a spatula to break up any clumps and combine all ingredients.

            Season the Rice: Pour in the soy sauce and sesame oil. Stir well to evenly coat the rice. Add the crispy bacon back into the skillet and fold in the sliced green onions.
