4 smoked sausages (your choice: chicken, pork, or beef), sliced

1.5 pounds baby potatoes, halved

1 red bell pepper, diced

1 green bell pepper, diced

1 medium onion, chopped

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper to taste

Fresh parsley or chives for garnish

Preheat your oven to 400°F (200°C). Grease a large baking dish with a little olive oil or non-stick spray.

    In a large mixing bowl, combine the halved baby potatoes, smoked sausages, red and green bell peppers, and onion.
