Ingredients

4 large buttery croissants

4 large eggs

4 slices of sharp cheddar cheese

8 strips of crispy bacon

1 avocado, sliced

1 cup fresh baby spinach

2 tablespoons unsalted butter

Salt and pepper to taste

Hot sauce (optional)

Instructions

Prepare the Croissants: Preheat your oven to 350°F (175°C). Slice each croissant in half horizontally and place them on a baking sheet, cut side up.

Bake the Croissants: Lightly butter the cut sides of the croissants, then bake them for about 5-7 minutes, until they are warm and slightly toasted.

Cook the Bacon: In the meantime, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and let them drain on paper towels.

Make the Eggs: In the same skillet, reduce to low heat and add the butter. Once melted, crack the eggs into the pan. Allow them to cook sunny-side up for about 3-4 minutes or until the whites are fully set. Season with salt and pepper. If you prefer scrambled, whisk the eggs beforehand and pour them into the skillet, stirring gently until fluffy.

Assemble the Sandwich: Take one half of a croissant and layer with a slice of cheddar cheese, an egg (or two for scrambled), two strips of bacon, a few slices of avocado, and a handful of spinach. For an extra kick, splash a little hot sauce. Top with the other half of the croissant.

Serve: Repeat for the remaining croissants. Serve immediately while warm and enjoy your delicious breakfast sandwich!
