Ingredients

For the crust:

9 graham crackers, crushed

1/4 cup granulated sugar

1/2 cup unsalted butter, melted

For the filling:

2 cups cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

1 cup sour cream

Zest of 1 lemon

1 cup fresh blueberries (plus extra for topping)

For the blueberry sauce:

1 cup fresh blueberries

1/4 cup sugar

1 tablespoon lemon juice

Instructions

Prepare the crust: Preheat the oven to 325°F (160°C). In a mixing bowl, combine crushed graham crackers, sugar, and melted butter until well blended. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake in the preheated oven for 10 minutes, then allow to cool while preparing the filling.

Make the filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the granulated sugar and continue mixing until combined. Add the vanilla extract, and mix well.

Incorporate eggs: Add one egg at a time to the cream cheese mixture, beating after each addition until just blended. Be careful not to overmix.

Add sour cream and lemon zest: Gently fold in the sour cream and lemon zest until fully incorporated. Finally, fold in the fresh blueberries, taking care not to crush them.

Combine and pour: Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Bake: Bake the cheesecake in the oven for 55-60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven, crack the oven door open slightly, and let the cheesecake cool in the oven for 1 hour.

Chill: Remove the cheesecake from the oven and let it cool to room temperature. Then wrap it in plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

Prepare blueberry sauce: In a small saucepan over medium heat, combine 1 cup of fresh blueberries, sugar, and lemon juice. Cook until the blueberries begin to burst and the sauce thickens, about 5-7 minutes. Remove from heat and let cool.

Serve: Once the cheesecake is chilled, carefully remove it from the springform pan. Top with the blueberry sauce and additional fresh blueberries for decoration.
