1 cup mixed fresh berries (strawberries, raspberries, blueberries)

2 tablespoons simple syrup (or to taste)

1 cup of sparkling water or club soda

1/2 cup heavy cream

Fresh mint leaves for garnish

Ice cubes

Extra berries for garnish

In a blender, combine the mixed berries and simple syrup. Blend until smooth. If you prefer a smoother texture, strain the mixture through a fine-mesh sieve to remove the seeds, but it's optional.

    Fill a tall glass with ice cubes to about halfway. Pour in the berry puree until it fills the glass about two-thirds full.

      Slowly pour sparkling water over the berry mixture, filling the glass almost to the rim. Stir gently to combine.

        In a separate bowl, whip the heavy cream until it forms soft peaks. Spoon the whipped cream on top of the soda mixture, creating a beautiful layer.
