In a blender, combine the blueberries, Greek yogurt, honey (or maple syrup), lemon juice, lemon zest, and salt. If using frozen blueberries, add water to help blend.
Blend the mixture on high until smooth. You may need to stop and scrape down the sides to ensure everything is well combined.
Taste the mixture and adjust the sweetness if needed, adding more honey or syrup based on your preference.
Pour the blueberry yogurt mixture evenly into popsicle molds, leaving a little space at the top as they will expand when frozen.
Insert popsicle sticks into the molds and transfer to the freezer.
Freeze for at least 4-6 hours or until fully solid.
To release the popsicles, run warm water over the outside of the molds for about 10 seconds to loosen them.

Serve the popsicles on a rustic wooden board or a colorful platter, garnished with fresh blueberries and lemon slices for an extra pop of color.
