Ingredients
  

1.5 lbs beef sirloin, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, finely chopped

3 garlic cloves, minced

8 oz mushrooms, sliced

2 cups beef broth

1 tablespoon Worcestershire sauce

1 tablespoon soy sauce

2 tablespoons all-purpose flour

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium-high heat. Add the beef cubes, seasoning with salt and pepper, and sear them until browned on all sides (about 5-7 minutes). Remove the beef from the skillet and set aside.

    In the same skillet, add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking until the mushrooms are tender, about 5 minutes.

      Sprinkle the flour over the mushroom mixture and stir well to combine, cooking for an additional 1-2 minutes to eliminate the raw flour taste.

        Gradually add in the beef broth, Worcestershire sauce, and soy sauce, stirring to combine. Bring the mixture to a simmer.

          Return the browned beef to the skillet and add dried thyme. Stir to coat the beef in the gravy. Reduce the heat to low and let simmer for 20-30 minutes, or until the beef is tender.

            Taste and adjust seasoning with additional salt and pepper if needed.

              Once done, remove from heat and let it rest for 5 minutes to thicken slightly.
