4 lbs beef short ribs

2 tablespoons olive oil

1 onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

2 cups beef broth

1 cup tomato sauce

1 tablespoon Worcestershire sauce

1 tablespoon balsamic vinegar

2 teaspoons dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Preheat your oven to 300°F (150°C).

    Season the beef short ribs generously with salt and pepper.

      In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.

        Sear the short ribs in batches, browning them on all sides for about 3-4 minutes per side. Remove them and set aside.

          In the same pot, add the diced onion, carrots, and celery. Sauté for about 5-6 minutes until the vegetables soften.

            Add the minced garlic and cook for another minute until fragrant.

              Return the short ribs to the pot, then pour in the beef broth, tomato sauce, Worcestershire sauce, balsamic vinegar, dried thyme, and smoked paprika. Stir to combine.

                Bring the mixture to a simmer, then cover the pot with a lid and transfer it to the preheated oven.

                  Cook for approximately 3 hours, or until the beef is fork-tender and falling off the bone.

                    Once finished, carefully remove the pot from the oven. Let it rest for about 10 minutes before serving.

                      To serve, scoop the short ribs onto plates and drizzle some of the savory gravy over the top. Garnish with freshly chopped parsley.
