1 lb (450g) beef flank steak, thinly sliced

2 teaspoons ground cumin

2 teaspoons ground coriander

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cinnamon

½ teaspoon cayenne pepper (adjust to taste)

Salt and black pepper, to taste

2 tablespoons olive oil

4 pita breads or wraps

1 cup hummus

1 cup mixed greens (lettuce, spinach, arugula)

½ cup cherry tomatoes, halved

½ cucumber, thinly sliced

¼ red onion, thinly sliced

¼ cup pickles (optional)

Fresh parsley, for garnish

Lemon wedges, for serving

Instructions
 

In a large bowl, combine the sliced beef flank steak with cumin, coriander, garlic powder, smoked paprika, cinnamon, cayenne pepper, salt, pepper, and olive oil. Mix well to ensure the beef is coated with the spices.

    Cover the bowl with plastic wrap and marinate the beef in the refrigerator for at least 1 hour (or overnight for more flavor).

      Preheat a grill or skillet over medium-high heat.

        Once hot, add the marinated beef in a single layer. Cook for about 3–4 minutes per side, or until fully cooked and slightly crispy on the edges. Remove from the heat and let it rest for a couple of minutes.

          While the beef rests, prepare the pita bread or wraps by spreading a generous amount of hummus on each piece.

            Place a handful of mixed greens onto the hummus.

              Slice the cooked beef into bite-sized strips and place it on top of the greens.

                Add the halved cherry tomatoes, cucumber slices, red onion, and pickles for added crunch and flavor.

                  Fold the pita or wrap tightly, securing the fillings inside.

                    Garnish the sandwich with fresh parsley and serve with lemon wedges on the side for an extra zing.
