Ingredients

1 lb (450g) ground beef

1 medium onion, diced

2 cloves garlic, minced

2 medium carrots, diced

2 medium potatoes, diced

1 cup frozen peas

2 tablespoons tomato paste

2 cups beef broth

1 teaspoon dried thyme

1 teaspoon Worcestershire sauce

1/2 teaspoon black pepper

1/4 teaspoon salt

1 tablespoon olive oil

1 tablespoon all-purpose flour (for thickening)

1 sheet puff pastry (thawed)

1 egg (beaten for egg wash)

Instructions

Sauté Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add the diced onions and carrots. Sauté until the onions are translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

Brown the Beef: Increase the heat to medium-high and add the ground beef. Cook until browned, about 7-10 minutes. Make sure to break up the meat as it cooks.

Add Vegetables and Seasoning: Stir in the diced potatoes, frozen peas, tomato paste, thyme, Worcestershire sauce, salt, and pepper. Mix well to combine.

Thicken the Filling: Pour in the beef broth and let it simmer for about 10-15 minutes, stirring occasionally. In a small bowl, mix the flour with a tablespoon of water to create a slurry. Add this to the filling mixture and stir until it thickens slightly.

Prepare the Baking Dish: Preheat your oven to 400°F (200°C). Pour the beef filling into a baking dish, spreading it evenly.

Cover with Puff Pastry: Roll out the puff pastry sheet and lay it over the top of the beef filling. Trim any excess pastry and pinch the edges to seal. Cut a few slits in the top of the pastry to allow steam to escape. Brush the top with the beaten egg for a golden finish.

Bake the Pie: Place the dish in the preheated oven and bake for 25-30 minutes, or until the pastry is golden brown and puffed up.

Cool and Serve: Allow the pot pie to cool for a few minutes before serving. This will ensure the filling isn’t too hot to handle.

                  Prep Time: 20 minutes | Total Time: 50 minutes | Servings: 4-6

                    - Presentation Tips: Serve the pot pie in individual bowls or directly from the baking dish, garnished with fresh thyme or parsley for an inviting touch. Enjoy your hearty meal!
