2 lbs beef chuck, cut into 1.5-inch cubes

3 tablespoons olive oil

1 large onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 cups beef broth

1 cup unsweetened grape juice

2 tablespoons tomato paste

4 sprigs fresh thyme

2 bay leaves

1 cup button mushrooms, halved

4 medium potatoes, cubed

Salt and pepper to taste

Chopped parsley for garnish

Sear the Beef: In a large Dutch oven, heat the olive oil over medium-high heat. Season the beef cubes with salt and pepper. Working in batches, brown the beef on all sides for about 5-7 minutes. Remove from the pot and set aside.

    Sauté the Veggies: In the same pot, add diced onions and garlic. Sauté until the onions become translucent, about 3-4 minutes.

      Add Carrots and Tomato Paste: Stir in the sliced carrots and tomato paste. Cook for an additional 2 minutes, allowing the tomato paste to caramelize slightly.

        Combine Ingredients: Return the beef to the pot. Pour in the grape juice and beef broth. Stir to combine, scraping any brown bits from the bottom of the pot.

          Simmer: Add thyme, bay leaves, and cubed potatoes into the mix. Bring to a simmer, then reduce heat to low. Cover and let it cook for about 2-2.5 hours, or until the beef is tender. Stir occasionally.

            Add Mushrooms: During the last 30 minutes, add the halved mushrooms to the pot. Stir well and continue to simmer.

              Final Seasoning: Taste and adjust seasoning with salt and pepper as needed.

                Serve: Remove thyme and bay leaves before serving. Ladle the beef bourguignon into bowls, garnishing with chopped parsley on top.
