4 large potatoes, peeled and quartered

1/2 cup whole milk

2 tablespoons unsalted butter

Salt and pepper to taste

2 tablespoons olive oil

2 medium onions, thinly sliced

1 tablespoon brown sugar

2 cups beef or vegetable broth

1 tablespoon Worcestershire sauce (plant-based if necessary)

1 tablespoon cornstarch mixed with 1 tablespoon water (optional for thickening)

Instructions
 

Prepare the Mash:

    - Place the peeled and quartered potatoes in a large pot. Cover with cold salted water and bring to a boil.
