6 high-quality pork sausages (or any preferred sausage)

2 pounds (900g) Yukon Gold potatoes, peeled and cubed

1/2 cup milk

4 tablespoons unsalted butter

Salt and pepper to taste

2 large onions, thinly sliced

1 tablespoon olive oil

2 cups beef or vegetable broth

1 tablespoon Worcestershire sauce

1 tablespoon all-purpose flour

Fresh thyme, for garnish (optional)

Cook the Sausages: In a large skillet over medium heat, add the sausages and cook until browned on all sides, about 10-12 minutes. Ensure they're cooked through, then transfer them to a plate and keep warm.

    Prepare the Potatoes: In a large pot, add the cubed potatoes and cover with cold water. Add a pinch of salt and bring to a boil. Cook until fork-tender, about 15-20 minutes.

      Make the Gravy: In the same skillet used for the sausages, add olive oil and sliced onions. Sauté over medium-low heat until the onions are caramelized, about 15-20 minutes. Add the flour and stir continuously for 1-2 minutes until the mixture is golden.

        Simmer the Gravy: Slowly whisk in the beef or vegetable broth and Worcestershire sauce. Bring to a simmer and let it reduce for about 5 minutes until thickened. Season with salt and pepper to taste.

          Mash the Potatoes: Drain the cooked potatoes and return them to the pot. Add butter and milk, mashing until smooth and creamy. Season with salt and pepper as desired.
