4 high-quality pork sausages (or chicken sausages for a lighter option)

1 lb (450g) Yukon gold potatoes, peeled and cubed

1 cup whole milk

4 tablespoons unsalted butter

1 tablespoon olive oil

1 large onion, thinly sliced

2 cloves garlic, minced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon Dijon mustard

Salt and pepper to taste

Optional: finely chopped parsley for garnish

Cook the Potatoes: Place the cubed potatoes in a large pot, cover with cold water, add a generous pinch of salt, and bring to a boil. Cook for about 15-20 minutes until tender.

    Prepare the Sausages: While the potatoes are cooking, heat olive oil in a skillet over medium heat. Add the sausages and cook until browned and cooked through, about 10-12 minutes, turning them occasionally. Remove from the pan and keep warm.

      Make the Onion Gravy: In the same skillet, add the sliced onions and cook until caramelized, about 8-10 minutes. Stir in minced garlic and thyme, cooking for another minute. Add a splash of water to deglaze the skillet, scraping up any brown bits, and then add the Dijon mustard. Season with salt and pepper to taste.

        Prepare the Mash: Drain the potatoes and return them to the pot. Add butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.

          Combine and Serve: Spoon the creamy mash onto plates, top with the sausages, and generously ladle the onion gravy over the top.
