Ingredients

2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper

Salt and pepper to taste

1/2 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice preference)

4 sandwich buns

Lettuce leaves

Sliced cucumbers

Fresh cilantro for garnish

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk with a pinch of salt and pepper. Add the chicken breasts, ensuring they're fully submerged. Cover and refrigerate for at least 1 hour (or overnight for best results).

Bread the Chicken: In a separate dish, mix the panko breadcrumbs with garlic powder, onion powder, cayenne pepper, and a pinch of salt. In another bowl, place the flour. Once the chicken is marinated, shake off excess buttermilk, then dredge in flour, followed by the panko mixture, pressing down to adhere well.

Fry the Chicken: Heat oil in a large frying pan over medium-high heat. Once the oil is hot, carefully place the breaded chicken breasts in the pan. Fry for about 5-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove and let them rest on paper towels to absorb excess oil.

Make the Bang Bang Sauce: In a small bowl, mix the mayonnaise, sweet chili sauce, and sriracha until well combined. Adjust the spiciness by adding more sriracha if desired.

Assemble the Sandwich: Toast the sandwich buns lightly if preferred. Spread a generous layer of the Bang Bang sauce on the bottom half of each bun. Place a fried chicken breast on top, followed by lettuce leaves, sliced cucumbers, and a sprinkle of fresh cilantro. Top with the other half of the bun.

Serve: Serve immediately while warm, with extra Bang Bang sauce on the side for dipping!
