Ingredients

2 ripe bananas, mashed

8 oz cream cheese, softened

1 cup sugar

1 cup sour cream

3 eggs

1 teaspoon vanilla extract

1 teaspoon lemon juice

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1 teaspoon cinnamon

A pinch of salt

Banana slices and whipped cream for garnish

Instructions

Preheat Oven: Preheat your oven to 325°F (160°C).

Prepare Crust: In a bowl, combine graham cracker crumbs, melted butter, cinnamon, and a pinch of salt. Mix well until crumbly. Press the mixture into the bottom of a 9-inch springform pan to form an even layer.

Make Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy.

Add Sweeteners: Add sugar, sour cream, and mashed bananas to the cream cheese. Mix until fully combined.

Incorporate Eggs: Beat in the eggs one at a time, mixing well after each addition. Then add vanilla extract and lemon juice, and continue mixing until the batter is smooth.

Pour Filling: Pour the cheesecake filling over the prepared crust in the springform pan, smoothing the surface with a spatula.

Bake: Place the cheesecake in the preheated oven and bake for about 55-65 minutes, or until the center is set but still slightly jiggly.

Cool: Once baked, turn off the oven and leave the cheesecake inside with the door ajar for an hour to cool gradually, which helps prevent cracks.

Chill: Remove the cheesecake from the oven and let it cool completely at room temperature, then refrigerate for at least 4 hours or overnight to set.

Serve: Before serving, garnish with fresh banana slices and a dollop of whipped cream on top.
