1 cup crushed graham crackers

1/2 cup unsalted butter, melted

1/4 cup granulated sugar

Filling:

16 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

2 ripe bananas, mashed

Topping:

1 cup heavy whipping cream

1/4 cup powdered sugar

1/2 cup caramel sauce (store-bought or homemade)

1/2 cup mixed nuts (walnuts, pecans, or almonds), chopped

Extra banana slices for garnish

Instructions
 

Prepare the Crust: In a medium bowl, combine crushed graham crackers, melted butter, and granulated sugar. Mix until all crumbs are moistened. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove and let cool.

    Make the Filling: In a large mixing bowl, beat the softened cream cheese with granulated sugar until smooth and creamy, about 2-3 minutes. Add eggs one at a time, mixing well after each addition. Incorporate the vanilla extract and mashed bananas, mixing until fully blended.

      Bake the Cheesecake: Pour the filling over the cooled crust. Bake in the preheated oven at 325°F (160°C) for 50-60 minutes, or until the center is set but slightly wobbly. Turn off the oven and let the cheesecake cool inside for 1 hour. Then cool completely at room temperature before transferring to the fridge for at least 4 hours, preferably overnight.
