Balsamic Fig Jam Grilled Cheese

4 slices of sourdough bread

2 tablespoons unsalted butter, softened

1 cup sharp cheddar cheese, grated

1 cup creamy goat cheese, crumbled

1/2 cup fig jam

2 tablespoons balsamic vinegar

Fresh arugula, for garnish

Salt and pepper to taste

Instructions
 

In a small bowl, mix the fig jam and balsamic vinegar together until well combined. Set aside.

    Preheat a non-stick skillet over medium heat.

      Spread softened butter evenly on one side of each slice of bread.

        On the unbuttered side of two slices, layer half of the cheddar cheese, followed by half of the goat cheese.

          Spoon the balsamic fig jam mixture generously over the cheeses.

            Top with the remaining cheddar and goat cheese, then place the other two slices of bread on top, buttered side facing out.

              Carefully place both sandwiches in the heated skillet. Grill for about 3-4 minutes on each side, pressing down gently with a spatula, until the bread is golden brown and cheese is melted.

                Remove sandwiches from the skillet and let them rest for a minute. Slice in half and sprinkle a pinch of salt and pepper over the arugula.

                  Serve the grilled cheeses topped with fresh arugula for an extra peppery crunch.
