2 ribeye steaks (about 1-inch thick)

Salt and freshly ground pepper, to taste

2 cups cherry tomatoes, halved

8 ounces fresh mozzarella cheese, diced

1 cup fresh basil leaves, torn

3 tablespoons balsamic glaze

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

Prepare the Marinade: In a small bowl, mix together the olive oil, garlic powder, dried oregano, salt, and pepper. Rub the mixture generously over both sides of the ribeye steaks. Allow them to marinate for at least 30 minutes at room temperature (or up to 2 hours in the refrigerator).

    Preheat the Grill: Heat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.

      Grill the Steaks: Once the grill is hot, place the marinated steaks on the grill. Cook for about 5-7 minutes on one side, depending on the steak thickness and desired doneness. Flip the steaks and grill for an additional 4-6 minutes. Use a meat thermometer for accuracy: 130°F for medium-rare or 140°F for medium.

        Prepare the Caprese Topping: While the steaks are grilling, combine the halved cherry tomatoes, diced mozzarella cheese, and torn basil leaves in a large bowl. Drizzle with balsamic glaze and gently toss to coat. Season with salt and pepper to taste.

          Rest the Steaks: Once the steaks are finished cooking, remove them from the grill and let them rest for about 5 minutes. This allows the juices to redistribute throughout the meat, ensuring it's tender and flavorful.
