2 medium zucchini, cut into fries

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

2 large eggs

2 tablespoons olive oil

Optional: Fresh parsley for garnish

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    In a bowl, mix the breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, Italian herbs, salt, and pepper. Set aside.

      In another bowl, whisk the eggs with olive oil until well combined.

        Dip each zucchini fry into the egg mixture, allowing excess to drip off, then coat in the breadcrumb mixture, pressing gently to adhere.

          Arrange the coated zucchini fries in a single layer on the prepared baking sheet, making sure they don't touch for maximum crispiness.

            Bake in the preheated oven for 20-25 minutes or until golden brown and crispy, turning halfway through.

              Remove from the oven and let them cool for a few minutes.

                Optional: Garnish with freshly chopped parsley before serving.
