Ingredients

2 lbs chicken drumsticks (skin on for crunchiness)

1 cup buttermilk

2 cups panko breadcrumbs

1 cup all-purpose flour

2 teaspoons garlic powder

2 teaspoons onion powder

1 teaspoon paprika

1 teaspoon cayenne pepper (adjust to taste)

Salt and black pepper to taste

1/2 cup hot honey (store-bought or homemade)

2 tablespoons olive oil

Fresh herbs for garnish (like parsley or thyme)

Instructions

Marinate Chicken: In a large bowl, pour buttermilk over the chicken drumsticks, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

Prepare the Coating: Preheat your oven to 400°F (200°C). In a shallow dish, mix together panko breadcrumbs, flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper.

Coat the Chicken: Remove each drumstick from the buttermilk marinade, allowing excess to drip off. Dip each drumstick into the breadcrumb mixture, pressing firmly to ensure a good coating. Place the coated drumsticks on a baking sheet lined with parchment paper.

Bake the Chicken: Drizzle olive oil over the coated drumsticks and bake in the preheated oven for 35-40 minutes, or until the chicken is golden brown and crispy, and a meat thermometer reads 165°F (75°C).

Drizzle with Hot Honey: Once the chicken is cooked, remove it from the oven and immediately drizzle with hot honey, ensuring each piece is well-coated.

Serve: Garnish with fresh herbs and serve hot with your choice of sides like coleslaw or roasted vegetables.
